Dirt to Dinner: From the Farm to Your Table

Come join us for a bilingual festival-style, health and wellness event that will look at the life cycle of food, from farm to table and beyond. Learn and practice skills that will help you make more economically, environmentally and socially sustainable decisions about food.
 
Our Science Stage will have presentations on a variety of topics, featuring the Nutrition Magician and Penny’s Puppets as well as cooking demos, basic vegetable gardening, nutrition with the National College of Natural Medicine and much more. See the scehdule below.

Meet partners from local organizations including Hood River Organic, Trackers Earth, City of Portland, Verde, Portland Purple Water, Environment Fitness, Boondockers Farm, National College of Natural Medicine, Portland Area Community Supported Agriculture Coalition, Portland Metro, Kombucha Wonder Drink and more.

OMSI will host a variety of hands-on tables and demos. Plant a seed and take it home to watch it grow, use leaves to make art, learn how important your sense of smell is to your taste buds, get your favorite vegetable painted on your face and much more.

Laugh, learn, and sing our way all the way to the table with some of your favorite foods. Food, frolic and fun for everyone.

11:30 AM A Healthier Grilled Cheese: Learn a new and delicious way to sneak in extra veggies while making a classic combination of grilled cheese and tomato soup with Ryan Morgan, OMSI's Executive Chef.

12:00 PM The Magic of Healthy Choices with the NUTRITION MAGICIAN® 

12:30 PM Wild Alaskan Salmon Salad: Learn how you can include a healthy balance of fats in your diet while enjoying some delicious salmon. Presented by nutrition and cooking experts Cory Szybala and Shawnte Yater of the National College of Natural Medicine.

1:30 PM Gardens of Eatin': Basic Vegetable Gardening: Want to grow organic food but not sure how? Boost your garden IQ with simple steps to success. From picking edibles for the right spot and season to prepping the soil and watering waste-free, get the story on weeding, managing pests and growing a bountiful garden without toxic chemicals. Plus, learn where to find plants, seeds and more tips for easy organic gardening.

2:00 PM The Sounds of Food: It’s not everyday that people think about the taste, texture and imaginative impulses food creates. Participate in a unique workshop using fresh fruits and vegetables to create a simple folk song with Joaquin Lopez.

3:30 PM Roasted Butternut Squash Macaroni & Cheese by culinary student, Jacob Madosik, from the Art Institute as he shows you how to replace the fat and sodium commonly found in macaroni and cheese and still make it delicious.
